Cheddar French Toast with Sizzled Tomatoes

2 large eggs
1.5 C. buttermilk, milk or heavy cream (each will give a different flavor) Allergic to dairy? Use goat's milk!
3/4 t. kosher salt
1.5 C. grated sharp Cheddar cheese or a goat's cheese (chevre) might be nice!
1 T. fresh thyme leaves or 1 t. dried thyme
8 thick slices of day old French bread or any country-style bread
4 T. unsalted butter (if using salted butter, cut the kosher salt amount in half)
2 red or green tomatoes
1/5 t. black pepper
1 T. olive oil

With a fork, combine the eggs, cream/milk/buttermilk/goat's milk, and 1/2 t. salt in a baking dish. Add the Cheddar and thyme. Soak 2 of the bread slices in the batter for 1- minutes, turning them once. Meanwhile, melt 1 T. of the butter in a large nonstick skillet over medium heat. With a spatula, lift the bread from the bowl, allowing any excess batter to drop off, and transfer it to the skillet, Use a fork to transfer some of the cheese from the batter to the bread. Cook the bread until golden , 3-4 minutes per side. transfer to a plate and cover to keep warm. Wipe out the skillet with a paper towel and repeat with all the other slices. Season the tomatoes with the remaining salt and pepper and heat the olive oil over medium heat in the skillet, tossing in the tomatoes to cook about 2 minutes per side. Serve alongside the French toast.
