Aubrey's Healthy Breakfast Cookies

Here is my healthy breakfast cookie recipe, yet to be named. They taste like a muffin top!

¾ cup butter/margarine
¾ cup packed brown sugar
2 Tbsp molasses
1 whole egg
2 egg whites
1 tsp vanilla
1 mashed banana
2 Tbsp milk (I used soy milk)
1-2 Tbsp fresh grated orange rind (depending on your taste)
1 ½ cup whole wheat flour
1 tsp baking soda
1 tsp baking powder
1 tsp salt
1-2 tsp cinnamon (depending on your taste)
3 cups old fashioned oats (not quick cooking)
1/3 cup wheat bran
½ cup shredded coconut
¼ cup chopped hazelnuts
½ zucchini, shredded

Preheat oven to 350. Mix margarine and sugar until light and fluffy. Add molasses through orange rind and mix thoroughly. Sift flour through salt together and add to wet mixture, then add oats and wheat bran. Mix until just moistened. Fold in remaining ingredients. Scoop with a large spoon and drop scoops onto a sprayed cookie sheet. Bake at 350 for 10-12 minutes. Leave on cookie sheet for 2 minutes after removing from oven, then transfer to cooling rack. Cookies will spread out while cooking and look like a muffin top; they should be light and fluffy.
