Mango and pineapple quesadillas

Ok, I admit, this is my husband's creation but they were absolutely delicious!

Like "L", I find it impossible to follow a recipe and frequently embark on my own. This has some great results while some very, very poor results (think, cooking orzo pasta in a crock pot for 8 hours=gooey, gross mess).

The recipe is totally simple.
You need:
One fresh mango
Canned, crushed pineapple (or fresh if you prefer)
Yummy cheese (we used a "quesadilla mix" of mozzarella, cheddar, and pepper jack)
Whole grain tortillas
Delicious sauce (we used a cilantro-style Archer Farms variety, but we'd probably go for something different, it was a little spicy... I would try a good-quality salsa)
A little extra-virgin olive oil

Here's the tortillas and sauce we used:


First, cut the mango into small diced pieces.


Then, you put a little EVOO in the skillet and turn to medium heat. Then drop the tortilla on, put the cheese, mango, and drained pineapple in the tortilla with a little sauce. Fry up to your delight.


Totally simple, low-hassle, and yum, yum, yum.
